Have you ever cried from eating something because it just gave you so many memories and emotions? No? Just me? Kare Kare is a Filipino staple dish that will have you wondering why you haven’t eaten this before. It is a stew with peanut butter sauce, (yes I said peanut butter) with lots of veggies, and beef over rice. Gotta have the rice! It’s originally made with oxtail and that’s how I was raised eating it, but Executive Chef Tara used short ribs which are equally amazing! She added ‘bagoong oil’ (shrimp paste) in this dish which is necessary for that umami taste. I’m so glad she did! This dish left me speechless because it brought me back to my childhood. To my parents cooking and how much food can be evolved through generations and seeing Filipino food on the map. Definitely a must try.
