Mama Cuba
This was nacho average roadside pitstop. Having finally exited Florida on our return trip to snow country, I Am Nacho Mama beckoned, brightly-lit just 30 seconds from Exit 29 off I-95 North. Traveler convenience box: Check. Guided in by hundreds of stellar internet reviews and at least one roadside billboard, we immediately loved the warm and lively vibe. Chef Carlos greeted us like family, rocking his signature straw cowboy hat and walked us through his Latin fusion menu. We warmed up on Ecuadorian shrimp ceviche and an off-menu app called Hondurepa, a mash-up of Honduran papusas and Venezuelan arepa. Both Delicioso! Then on to the “Queen of the House,” Carlos’s most popular dish, the Mama Cuba. Like a Cubano except boasting queso, pickled cabbage and pulled pork grilled on the patio in the shell of a 1941 Ford truck. Fantastic roadside eats for lucky locals and passers-through alike.
