I almost always go to the Birkdale complex when I am in the swanky Huntersville area north of Charlotte. Today we went to Red Rocks Cafe to enjoy one of their daily lunch specials. I opted for the Mediterranean Shredded Chicken Tacos. The presentation was splendid and the flavors hit for the cycle. Sauces, spices and veggies partnered with a side of well-done tots: my lunch was a home run! I start nearly every lunch with soup and today was no exception. The home-made cream of cheddar and potato was share-worthy. Next time you are near the lake please spend time in Birkdale and try Red Rocks – a great use of time and stomach space.
