There’s a good chance you are not just going to be moseying around the Outer Banks of North Carolina (OBX as it is known). And if you are there, you are probably renting a big house by the water and whipping up your own meals. May I urge you to get out to dinner one night and find the charming Saltbox Cafe? Their menu, from dishes to brews, is hugely local and they are not messing around. My locally-caught tuna was a thick hunk of fresh fish prepared to perfection, which in my case means seared and grill-salty on the outside and darned near sushi on the interior. Topped with fabulous asparagus atop a bed of couscous and corn salad, this was a meal I did not want to end. So we had the key lime pie! Congenial Chef/Owner Randolph Sprinkle made the rounds of every table at closing time. Yes chef, that is a well-deserved bow.
