We love Pittsburgh so much we actually came up for a fun weekend in advance of my wife’s Monday morning meetings. These folks love their food and Proper Brick Oven in the heart of the Cultural District does not disappoint. They boast a “scratch kitchen” which means it’s all made in house. I could not describe their pizza-making process as well as they do:  “Our fresh dough is produced from a proprietary sourdough starter. The dough is allowed to rise for 3 days, which gives our crust a supremely unique flavor and texture.  Proper pizzas are baked to order in our 800-degree wood-burning oven and measure approximately 11 inches across (8 slices per pizza).” What they said! Bring a friend. You will not have anything left to take out.
