We discovered Mojo’s Tacos through takeout after a long walk on the beach. My husband encouraged me to order the nachos, even though I protested that nachos do not make for good takeout. At home I proceeded to neglect my tacos in favor of these nachos, which are the best we’ve ever had, and we are nacho people! We’re determined to figure out the queso recipe they use instead of melted cheese on top, sprinkled with fresh chopped jalapeno, tomato and black beans: a sort of pico de gallo if you will, along with their signature Mojo sauce, which we theorize also contains cheese. The chicken is the way to go with these nachos, as it is marinated (the girl at the counter told me) and shredded, never dry, and always tender.
