Dominican Crab Back
Crab in Oklahoma? Probably not locally caught, but the menu billed it as a “house special” at this cheerful Caribbean restaurant, so I bit. The appetizer came out piping hot, bursting high with nothing but crabmeat (and a very light breading), and the aforementioned Dominican spices, which gave it an excellent afterburner mouth feel. As a former Marylander, may I note, not a hint of Old Bay in this dish. It was not a problem.
