Crayfish Etouffe
This is why you come to the South. Sunday lunch at Crescent City Grill, innocuously located in a mall parking lot, is packed! I hunkered down at the bar and ordered the obvious (at least for this native NYer). The stew-like dish arrives steaming hot, just the aroma enough to make your tastebuds weep for mercy. The saucy base boasts a deep, rich, complex smoky flavor with a hint of simmering heat. Every last bite of abundant crayfish is like lobster, tender and moist, and man that bowl is packed! When every last piece is gone, yoiu can devour the sauce with the leftover rice. The folks next to me have a plate of fried crab claws. I’ll be back.
