Copper River Salmon
For several precious weeks a year, those of us back east get the opportunity to indulge in one of my favorite seafood dishes, Copper River Salmon. From those frigid waters, an amazingly flavored backward-swimming star is harvested for the lucky few to enjoy. Sure, we can buy it locally, but getting it brought to the table accompanied with a large portion of fresh veggies gets me going. Today I went to one my standards, Seasons 52. Mission accomplished. Maybe a splurge for lunch, but I certainly didn’t care. I chose the cedar plank style, and it did not disappoint. Get it while you can!
