There used to be a time when my wife would ask for the vegetarian or vegan option and she would get a plate of roasted or steamed vegetables. Thankfully, those times have changed. More recently, I have had some incredibly inventive and creative dishes, many of which have made me question if they are in fact vegan, as the flavor profile and taste are so incredible. Like these cheësy truffle fries. They are just as delicious as I would have expected from a sauce that contained dairy, but it is 100% vegan.
