I seldom get fried rice because, to me, it’s a risky bet. Is the rice cooked correctly? Does the sauce enhance and not overpower the dish? Does the texture and flavor of the beef play well with the rest of the ingredients? In the case of Chaufa with Beef the answer is YES on all counts! Its complex,  and the well-balanced sauce really fleshes out the flavor of the beef. The veggies were crisp and the eggs were done just right. It’s interesting that Leche De Tigre was formerly known as Two Peruvian Chefs, because complex, yet balanced flavor like this could easily be a two-chef job.
