Picture this: you’ve been in Austin for an incredibly short and busy work trip and haven’t had much time for exploring. A must-do before leaving? Grab a breakfast taco, or three. Even at 9:30 a.m. on Wednesday, Rosita’s was packed with new visitors and regulars. Making family recipes since 1985, it’s a BYOT (build your own taco) situation, and I wouldn’t have it any other way. I’ll be dreaming about the potatoes and salsas.
