Bibimbap and Japchae
Sobhan Tulsa is a women-owned Korean mother-daughter duo who is serving up authentic and delicious food inside Mother Road Market. The Japchae is savory sweet potato glass noodles stir-fried with assorted vegetables. The Bibimbap is a mixed rice dish topped with seasoned bean sprouts, cabbage, carrots, spinach, protein, and a perfectly fried egg. While they have plenty of protein options, I stuck with tofu. It is the best tofu I ever had— packed with flavor, crispy on the outside, and soft of the inside. You can pick your sauce, but I always go for the sesame miso and a little bit of gochujang—red chili paste— to give it some spice. I decided to put the Japchae on the Bibimbap. The sweetness of the glass noodles with the veggies and miso sauce? All I can say is yum!
