Beef Puffy Taco
After finding Ray’s Drive Inn in San Antonio, I was getting ready to have my second puffy experience. This time the airy, crispy, crunchy taco shell was stuffed with some of the most luxurious, tender and flavorful beef the I have ever put in my mouth. Despite the simplicity of this dish, the precise preparation and spicy structure make it memorable. The crispy puppy taco shell was the perfect accoutrement for the slow cooked beef. With flavor like this, the recipe had to be handed down from grandma. Add the crispy lettuce, tomatoes, etc. and you have a righteous light meal or snack. Ray, you are a puffy devil, and an excellent chef. Good job.
