OMG the green sauce! Is this not why we come to Texas? Mama’s sits in a nondescript location with an utterly charming interior. Like an old school bar room, you almost feel the need to order a Lone Star with breakfast. Not required. The chilaquiles verde is like none I have ever had back east. The egg is brilliantly fresh. The chips soaked in the sauce are drenched in flavor with every bite, soft and piquant. The big surprise (at least to this NYer)? Tender strips of chicken thigh shredded beneath the whole affair. Every forkful a discovery. Mama’s is throwing a chilaquiles event. Come and partake.
