Trout Ala Plancha
Trout perfection is not easily obtained, unless you are here in Barcelona – the Nashville wine bar that is. There was nothing fishy about the cook on this fish. Absolute precision. Every drop of juice was preserved and packed with powerful flavor. When you juxtapose the mustardy, citrusy, crispy pan-seared skin, it ascends into the ineffable. Crisp sugar SNAP peas, tendrils and leaves included were the perfect, naturally sweet compliment to balance out the entire dish. Good job chef Eli!
