Sugar-Cured Ham Steak
Every time we eat at Snow White’s I am impressed with the level of authenticity this operation brings to classic southern fare. You can tell that the ham steaks have just been individually carved from an actual sugar-cured ham and then seared to perfection, resulting in a light crust. Turnip greens, despite what some may think, are not an easy side dish to peg. Are the greens correctly tender? Is the seasoning complex enough? Does the fat incorporate well into the greens? In this case yes, yes and yes. Spot on! The preparation of the fried squash was likewise, flawless, with a delicate, crispy breading that remained tender and flavorful. A roll on the side for corralling all that flavor and there you have it. A meat and two at its finest.
