Steak Tartare
Emblazoned on the side of a water tank as you drive into Sacramento are the words “Farm to Fork Capital of the World.” I put that to the white hot test at The Waterboy and quickly had my answer. When my kindly waiter served up my steak tartare, he boasted about its lineage the way I talk about my kids. “Our meat is sourced from Five Dot Ranch in Susanville. The preparation includes 14 ingredients, some of which you will recognize, the rest which will pleasantly surprise.” He was correct. Accompanied by crispy frites and a house specialty caramelized onion and anchovy dip, this light late repast left me craving more Sacramento.
