I stopped by The Unconventional Diner in Washington, D.C. this past weekend and had to try the Sopa Criolla, their Peruvian soup. I’m so glad I did—it was outstanding. This isn’t your average soup: it’s a hearty, comforting bowl built around tender Angus beef, soft potatoes, a perfectly cooked fried egg on top, and a sprinkle of queso fresco that ties everything together. The broth had real depth, with just enough warmth and spice to keep things interesting without overwhelming the other flavors–a little kick that snuck up on me in the best way. Every component felt intentional and the combination of textures (silky broth, creamy egg yolk, crumbly cheese) made each spoonful genuinely satisfying.
