I am not sure when brunch became this popular, but I am 100% in support of it. Since there are only two days every weekend, I take advantage and plan my brunches in advance. And luckily, I had Flap Your Jacks on my list as I didn’t realize how much I needed this Smokey Benedict. There were two perfectly poached eggs that could not wait to be burst, a generous portion of smoked salmon, and all placed on a toasted butter croissant and generously covered in an amazing lemon hollandaise sauce. Not only did I finish this entire dish, but I also wolfed down a cinnamon roll that went straight from the oven to my table (but I’ll save that for another post).
