Smoked Turkey & Slaw
If you don’t eat this dish, YOU are the turkey! The skilled pit master ensured that the smoke permeates every fiber of the meat without being excessive. The meat had a wonderfully “just carved” texture – because it had been just carved! The corn and bean salad was slathered with an inventive fresh cilantro mayonnaise-based dressing, topped with crispy bacon, making it the absolutely best that I had ever eaten. It’s rare to rave about coleslaw, but this is the coleslaw to rave about. Its cabbage was still fresh, juicy and tender, plus its dressing was flavorful and complex. Each bite was moist without any excess liquid and that’s no small feat. Turkey is not just for holidays anymore because when you eat it at Noble’s, every meal is Thanksgiving. .
