Singapore Mei Fun
A few years ago we backpacked Singapore for a couple of months and ate street food every single day. So I say this confidently – Hawkers Mei Fun is an accurate, spot-on recreation. It made me feel like I was chillin’ under the Helix bridge on Singapore Bay waiting for the nightly light show. The rich, thick yellow curry was complex, appropriately heavy on the turmeric and garlic, and generously coated each noodle without dripping. The chicken and shrimp must have been wok-fired at precisely the correct temperature because their flavor and texture were perfect. The vegetables were crisp, not tough and played well with the other components. Great dish! So, if you are a flavor traveler, save yourself a few thousand bucks and get the Mei Fun at Hawkers instead. Your wallet and taste buds will thank you.
