Seared Scallops
What an exceptional symphony of flavors! The scallops were seared to perfection with just the right amount of fat. They were lovingly, nestled in white gazpacho which is actually tomato-less. This was the original original gazpacho, aka Ajo Blanco made from pears, apples, bread and garlic. The flavor mixes so well with the pistachio pesto it’s freaky. Then the pomegranate pieces chime in with the right amount of tart sweet highlights. The interplay between the different flavor structures is exceptional. You may think you’ve had scallops before, but you’ve not had these. They are awesome!
