Salmon Toast
This is not your average NY bagel and lox. And yet, improbably, it works! Cold-smoked salmon, stacked high and topped with a poached egg. Before you embark, observe the underpinning of dill, goat cheese, one slice of tomato, a smattering of pickled red cabbage, and tomato jam! Whaaaa? Cut in. Watch the yolk ooze. And try it. Fantastic! A crazy good blending of flavors, all tied together by the smoky richness of excellent smoked fish. Am I a convert? In East Nashville, heck yeah!
