Salmon Poke
This poke bowl is so light and refreshing! It has fresh cold salmon chunks in a sweet umami and sesame sauce. What makes this different than a traditional poke bowl is the lack of rice. Instead, it sits on a bed of arugula and seaweed giving it some bitterness and saltiness. It’s topped with avocado, edamame, scallions and sesame seeds for some other textures and depth of flavor. Make sure to catch the sunset from the rooftop; it’s called VU for a reason!
