There’s no shortage of rib joints in Memphis. Ya gotta just pick your mood. Corky’s is a super-welcoming place in East Memphis with plenty of seats and a good bar to watch a game and tuck in. I went with the half slab, dry and wet. Good choice off a menu of difficult choices. All tender, the sauce not cloying or sweet, and the dry rub? Eeeyup! Ya got your smokey beans, your slaw, a pint of Wiseacre beer. And Anita behind the bar to make the whole experience a joy. If you only have one night in Memphis? Go.
