Pozole
Thanks for the $ 12.99 vacation! A few years ago Lulu and I took three months to road trip through many of the small villages in central Mexico. As soon as the first taste of this Pozole hit my limbic system, poof! I could almost feel the Central American sun on my face. Seriously, this is the best replication of authentic home-cooked Pozole I have ever eaten! Fist size chunks of pork simmer for hours in a rich tomato base until they unite into a divine broth filled with large tender hominy kernels. The texture of the hominy screamed home-canned, like Mexican soul food. If flavors transport you, try the Pozole at El Jaliciense for the cheapest vacation your senses will ever take.
