Barcelona Wine Bar absolutely nailed it with their Paella Verduras. It tastes authentic, like something you’d order at a cozy restaurant in Spain. Packed with carrots, Brussels sprouts, cauliflower, onions, and capers, it’s hearty without feeling heavy, and the chervil aioli adds a fresh, herby finish. This shareable dish is made for 2–4 people and the crispy socarrat at the bottom is the whole reason to order it. The crunchy, caramelized rice is the best bite. One thing to note: the paella takes longer to cook, so plan your tapas accordingly, because you’ll want to save room for this one.
