Microphone Czech One Two
Omakase often refers to multi-course Japanese meals with several small plates. Soseki goes bolder, adding American and global flavors into the mix. So before the sushi and such, the restaurant’s chefs serve a few non-Asian flavors. Pictured here is “Microphone Czech One Two.” It’s a fun take on Eastern European classics, sort of a rich mushroom soup served with sauerkraut and a local farm-raised egg. It’s even plated on a schmaltzy Grandma-like dish. Up to 10 diners eat at a counter that faces the chefs, who explain each creation as it’s presented. Other punny items include “Her name is Rio,” foie gras with Brazilian flavors; and “Thufferin’ Thuccotash!”, duck with Middle Eastern baharat spices along with succotash, from our southern states.
