Mi Xao Gion
This brings back so many memories of a similar dish my mother used to cook when I was a child. I think the reason I love it so much is the crispy deep fried egg noodles. The sauce and juices from the seafood coat and moisten them. The sauce, despite being mild and subtle, was interestingly complex, and the seafood was perfectly cooked. Not a rubbery crustacean in the bunch. I believe you would call this Vietnamese comfort food. Well done Kien Giang!
