Meat Loaf
After eating this meal, my mother is rolling over in her grave because it’s not “just like Mom used to make.” It’s better! The texture and seasoning of the meat was inventively perfect, more complex and inviting that any meatloaf I’ve ever had. The portion size was enormous, and it was slathered with a sweet and tangy barbecue sauce. Heresy! The mashed potatoes were obviously done from scratch and the corn and bean salad was bathed in a tangy mayonnaise-based dressing with fresh cilantro incorporated. Liberal amounts of rich thick gravy served to unite all of the flavors beautifully. Luckily a hoecake was served to capture that last drop of flavor lingering on the plate. Since I’ve eaten at Noble’s, I may never eat anywhere else again! It’s really is that good.
