These big and meaty wings were really spot on, a perfectly fried version of flavor-packed juiciness. As a “sauce guy,” I can affirm that the Buffalo, Tn Hot, Mango Habanero and Dragon varieties made in-house are exceptionally flavor-packed and well balanced. The flight of sauces was a delight as well. The plum was complex with a smidge of heat elevating its naturally sweet base. The blue cheese was creamy, pungent and chunky. The dragon sauce was hoisin-based, but with many layers, each bursting with flavor. There’s no doubt that these wings are not only “off the hook,”, but Beyond the Edge as well.
