Heart of Palm Calamari
Heart of Palm Calamari? Huhhh? Yes, I had to ask the friendly and knowledgeable barkeep if this dish had any relationship to the sea, and yes, I’m sure glad I did. Lightly battered cubes of artichoke heart fills in for the chewy cephalopod and it is prepared beautifully – enhanced by masa pepita, pepperoncini, vegan parmesan and accompanied by a green chili aguave aoili and chipotle tomato sauce. The dish is as light as a feather and happens to also be Vegan and gluten-free.
