When I asked the owner of Taqueria Los Castillo what their best dish was I was expecting an answer of carne asada or mulitias, or perhaps carnitas – but not Hamburguesa and papas fritas. However, he was unwavering in his choice and begin to explain why. They make the meat fresh daily from several different cuts and mix in spices, ketchup and mustard. They serve this huge burger on a toasted bolillo roll with the precise ratios of lettuce, onion, tomatoes and some odd additions such as Sriracha. The burger is so large that you have to flip it to eat it. It’s flanked by hot pickled carrots and perfectly cooked shoestring fries. Wash it down with a hibiscus aqua Fresca and end with freshly cut fruit. At Taqueria los Castillos, where the small things matter, the burger really is the star of the show.
