I like hot food but I may have met my match. I had heard about this dish for years. The waitress said “medium” is hot. I said hurt me. The chicken is moist and tender, the skin crisp. Like falling asleep on the beach on a hundred degree day! Without suntan lotion!! The flavor is excellent. The key to self preservation is to go for the meat beneath the skin and enjoy the intense flavor, between the rivulets of sweat running down your forehead. My third Hippies & Cowboys beer was paramount to success.
