Cupitol, the buzzie, Evanston/Northwestern University hangout is still dishing up great food, even as winter sets in and Covid has us locking down. It’s takeout for now, but if you are all about delicious and simple, this dish is representative. Buttery eggs, tart jam and whipped butter to accompany that toast, and – gravlax! Home-made, cured perfectly, subtle flavor and great consistency. We’re all sick of cooking and gravlax is not exactly something you whip up. Give this a try.
