Fried Catfish
Normally I’m not a fan of cornmeal fried catfish because it can become a resting place for grease, but not at Noble’s. The cornmeal that surrounded the moist, tender and flavor-packed catfish was uniquely seasoned and had a voice all its own. The tartar sauce was rich and creamy with both tangy and sweet flavor notes. The mac & cheese had a roux that was creamy and flavorful, the pasta perfectly cooked. It takes longer to get this creamy cheesy yumminess, but the chef obviously thinks it’s worth it, and so do I. The fries were fluffy strings of sweet potato surrounded by a crispy shell without a hint of greasiness. Noble’s has scored again!
