During my best friend’s rehearsal dinner at Monterey Bay Fish Grotto, overlooking Mt. Washington’s breathtaking aerial views, guests were dazzled with the couple’s curated menu. I chose the Chilean Sea Bass. To elevate the fish’s traditional buttery flavor profile, the chef drizzled watermelon, honey, cucumber and lime to add a sweet component. I have a huge sweet and spicy tooth, so I personally love that the Aleppo pepper’s fruity tang brought out the sweetness in those ingredients. But it was rounded off with tajin and chili powder for a spicy and salty finish. Overall this was the perfect summer dish that complimented the city lights!
