Chile Relleno de Vegetables
This beautiful dish has so many interesting and unique components. Representing the Mexican flag, the green section is made up solely of cilantro, the white is a “zesty tomato white wine sauce,” and the red is pomegranate seeds. Under the indulgent cream sauce is a poblano pepper stuffed to the brim with vegetables and cheese. The bitterness of the cilantro adjacent to the pomegranate seeds is a combination you would never think to put together, but it works! Eating on the patio of the brand new Tempe location was a great end to the scorching summer weather in Arizona.
