Chicken and Dumplings
Any picture of this dish could NOT do it justice. The depth of flavor and creaminess of both the dumplings and the squash casserole is just amazing. The dumplings are homogeneously tender, but firm, without a hint of doughiness and packed with a level of chicken flavor that only slow simmering can bring about. In fine Southern tradition the squash casserole is buttery and smooth but retains its delicate squash essence. The chicken is “fall apart tender,” juicy and flavorful. Complementing this flavor combo is the crisp sweet vinegar note of the cucumber and onion salad. The cornbread is super moist and perfect for sopping up any lingering chicken juices.
