Whoever coined the phrase “Don’t judge a book by its cover” must have been eating this dish at the time. The homogeneous, monochromatic appearance of these nachos had my mouth expecting something bland, flavorless and  unexciting. Holy cow was I wrong! This dish was  beautifully executed and packed with flavor. The sauce, obviously from multiple cheeses, was complex with a creamy texture and an interesting spice structure that complemented the dish well.  The shredded chicken was perfectly seasoned and saturated with cheese, making for an awesome flavor combination. Plus, the fresh, precisely salted chips magically stayed crisp until the end. So whether you are at Kimbros to jam in the music room, or simply listen, these creamy, crispy, crunchy, cheesy chicken nachos are the perfect “share food” to keep you “pickin and grinning” into the wee hours of the morning.
