Vietnam has been on my shortlist for decades, but after experiencing the precision of this vermicelli bowl, I feel like I have already been “in country.” This dish was so authentic – disarmingly simple spicing perfectly balanced with the crunchiness of coarsely ground peanuts. The vermicelli was tender, not clumpy. The egg roll was perfectly crispy with a well seasoned interior. When you suspend the spicy pork in the freshness and texture of a cucumber, lettuce and mint Julienne, it all works. For those of us with a sweet predilection, feel free to douse everything with the sweet chili sauce copiously provided on the side. Great flavor work, great dish, Kien Giang!
