Bison Back Ribs
5 huge bison ribs on a one-meat plate? Correct. In a vintage/rugged ‘cue shop on a pleasant street outside of downtown Denver. For the uninitiated, bison is spicy, zesty, chewy and stringy, and that’s not to mention the burnt ends all included in each rib. Abundant meat flavored with what I can only call the Old Bay spice of Colorado. The cowboy beans feature 3 varieties with vinegar and bits of fiery pepper. Even the cornbread is amazing! The customers lined up out the door look like mountain bikers or avalanche skiers, or perhaps they just hiked out of the woods. The joint has a hip, groovy, smokey, wooden bench vibe. And it’s run (or at least manned) by two guys with fantastic beards. The real deal! Go for it.
