As someone who usually says “beat it!” when it comes to beets, imagine my surprise when I added this Beet Ravioli from Wooden City Spokane to my top 3 favorite meals ever. Beet-infused pasta stuffed with goat cheese and little bits of beets swim in a tangy chive cream sauce, topped with fresh basil and crispy shallots that add a savory kick, and candied pistachios that are just plain addictive. Each bite was a delightful balance of textures and flavors. Sweet, tangy, creamy, crunchy – I can probably just end the review there. Dining at Wooden City Spokane is always a treat, and this dish alone is worth a return visit. If you’re like me and usually steer clear of beets, trust me — this ravioli might just change your mind.
