Beef Brisket
On a recent trip to the Lone Star State, I had to get some legit central Texas style barbecue! Smoke Sessions Barbecue in Royse City, about a half hour out of Dallas, was highly recommended and I can see why. It’s clear they have a reputation in the area for quality Cue. Their smoked meats tend to sell out, so visiting early is a must. The attractive restaurant is large and spacious, almost looks like a fire station. I ordered a 1/2 pound of brisket and a spicy smoked beef sausage. The brisket was perfectly moist with an exquisite bark. For my side I had the tater salad and it was outstanding, somewhat of a rustic cut that was nicely dressed and seasoned. Meals here come with sliced white onion and a handful of pickle chips that provide a nice crunchy hit of acidity that pairs beautifully with their tender, smokey meats.
