Pan-Roasted Mussels
I recently had the pleasure of trying the pan-roasted Hollander & de Koning mussels for my mom’s birthday. The chefs work directly with farmers and fishermen from the Northeast and Gulf Coast to the West Coast to fly in seafood daily. The dish was a delightful combination of fresh succulent mussels, spicy chorizo and a delicious white wine sauce. The mussels were perfectly cooked, tender and juicy, with a flavor that was rich and buttery. The chorizo was not spicy to me, however did bring out a smoky flavor. The white wine sauce elevated the flavors of the mussels and chorizo and was accompanied by a slice of delicious grilled rustic sourdough bread.
