Spinach Pecan Salad
Several friends have recommend this dish at the German iconic pub, to which I would reply, “spinach pecan chicken salad? Really???” But food is about ratios and nuance and that’s what makes this particular salad so special. The red wine vinaigrette is zesty and lemony, and the balsamic vinaigrette is spicier than I would have expected, but in a good way. It’s the glue that holds all the other flavors together: crisp spinach, chewy tart cranberries, toasted pecans and grilled chicken with the perfect char. I guess the old adage is true, sometimes “simple is better.” That’s certainly true here at the Germantown Pub.
