Aged Hamachi “Tonkotsu”
Just outside Disney World, Susuru serves hip Japanese snacks and meals in a playful woodsy space loaded with toys. Now owner Lewis Lin has brought a similarly ultra-casual grunge feel to a mid-city neighborhood — only this time he added a “Couples Bar” that faces the open kitchen and is devoted to serving $$$$ multi-course tasting menus prepared by Chef Cayo Del Alcazar. The dish pictured is house-aged hamachi (yellowtail) surrounded by a sauce of Japanese parsley and dotted with the petals of edible flowers. The dish was number seven of 10, arriving before a skewered hunk of Wagyu steak in a kokuto tea sauce and matcha foam. The savory finale, kamameshi, was luxury-loaded: wagyu, uni and lobster. Truffle made repeated appearances too. Tattoos abound, and more familiar foods like Japanese fried chicken are sold in the main dining room.
