Ham and Egg Croissant
I sooo want to call this a Croque Madame, but je suis desolee, truth in advertising – it is a croissant-wich. A very good one! The eggs are scrambled just right, with enough butter to clog an artery. The ham is diced and smoky and generously portioned for a bit in every bite. But the slam dunk is the croissant. It doesn’t crumble, it melts. That means every mouthful is unctuous joy, and it pairs perfectly with that fabulous Portland home-brewed coffee. Paul’s has a decent bistro menu. Maybe someday I’ll get past this sandwich and give it a try.
