Delmonico’s may have invented Eggs Benedict a century and a half ago, but Café Tu Tu Tango has completely rewritten the score. The classic version felt a bit refined, traditional, perhaps just a little stodgy? Here the kitchen gives the dish a Cuban rhythm. Instead of the neat, uniform slice of Canadian bacon, you get tender strands of pulled pork—juicy, caramelized, and texturally alive. The difference is dramatic: Canadian bacon sits politely on the muffin; the pulled pork dances across it. Then comes the twist. Instead of hollandaise? Mornay sauce!—a richer, creamier, cheese-laced cousin that blankets the pork and perfectly poached eggs. If the original Benedict is a proper hotel orchestra, this version is Cuban jazz. Delmonico would probably roll over in his grave, and then ask for seconds.
